White Bianchetti Truffles are widely used because of their similar characteristics to the White Alba truffle. Botanically classified as Tuber borchii, It is also known by names like Italian Spring white truffle or Tuscany white truffle, our Bianchetti white truffles boast a complex flavor profile. Imagine notes of sharpness, earthiness, hints of garlic, and a subtle touch of cheese—all encapsulated in each delicate truffle.

Planning your next culinary masterpiece? Keep in mind our recommended serving size of 1 oz per 2-3 servings, ensuring each dish is infused with the perfect amount of truffle essence. 

Shave thinly and combine with oil and a dash of parmesan on toasted bread, pasta, meat, or fish. Avoid cooking or exposure to excessive heat to preserve their delicate taste.

Care instructions: keep in the refrigerator at 37.5 F, wrapped in a paper towel for up to a week. To ensure quality, we recommend using within 3-4 days after they are received.

For the best flavor, serve fresh truffles at room temperature. Remove the quantity you plan to use from the refrigerator at least 15 minutes before serving.

Truffles can be simply shaved using a truffle shaver, microplane®, or mandolin set to the thinnest possible setting, if applicable.

White truffles are exceptionally prized and should never be heated, as heat will degrade their delicate aroma. Black truffles, on the other hand, are more robust and their flavor can be intensified with gentle heat or minimal preparation.

It's natural for truffles to develop a bit of mold. Simply brush it off gently with a soft brush. Avoid washing your truffles.

To maintain the quality of your fresh truffles, follow these steps immediately upon receiving them:

  1. Wrap: Enclose the truffles in clean, dry paper towels.
  2. Contain: Place the wrapped truffles in an airtight container.
  3. Refrigerate: Store in the refrigerator at 34°-36°F.
  4. Daily Maintenance: Replace the paper towels daily to maintain optimal freshness.

We highly recommend enjoying your truffles within 48 hours of arrival. Please keep in mind that truffles have a very short shelf life.

Black Burgundy Truffles (Tuber uncinatum) are 100% Italian, sourced from the regions of Piedmont, Emilia Romagna, Marche, Umbria, Lazio, Abruzzo, Campania, and Molise.

Love truffles

I actually prefer the black truffles to the white, which have a subtler taste. Best use is in scrambled eggs, next pasta and third risotto. I preserve them sliced in melted butter (organic) and then in the freezer.
