Truffles are identified by their peridium, gleba, asci, and spores. Comprised of 80% water, truffles' remaining 20% is a mix of ash, nitrogen, proteins, lipids, carbohydrates, and fiber. For optimal freshness, store them wrapped in absorbent paper inside a plastic or glass container in the fridge's lower section (32 to 39°F) for up to three days.
