Flavor profile
Strong aroma with fruity notes of cocoa, forest floor, and dried fruit. Its flavor deepens when gently heated, releasing a rich, deeply prized umami character.
How to use
Sliced or grated, best raw or lightly warmed. Peak season: January and February.
